Ingredients
- 125 g wheat flour
- Zest of 1 lemon
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tbsp. granulated sugar
- 1 medium egg, beaten
- 10 g butter, melted
- 150 g buttermilk
- 50 g California raisins
- Oil for frying
For the raisin syrup:
- 50 g California raisins
- 75 ml maple syrup
Method
Stir together flour, grated lemon zest, baking soda, cinnamon and sugar in a large bowl. Mix eggs, butter and buttermilk with an electric whisk until the mixture becomes a thick batter. Stir in the raisins.
Heat the oil to 170 °C in a deep fryer or large saucepan. Using an ice cream scoop, scoop up 4 lumps of dough, place in the oil and fry for 3-4 minutes. Turn the apple slices once and fry until golden and cooked through. Lift the apple slices out with a slotted spoon and drain on kitchen paper. Repeat the procedure until 12 apple slices have been fried.
Prepare the syrup by boiling the raisins, maple syrup and 2 tbsp. water together in a small saucepan. Garnish the apple slices with the finished syrup before serving.
Chef’s Tip
Sprinkle powdered sugar on top for a quick snack instead of serving apple slices with syrup
